So it was Shrove Tuesday this past Tuesday and on Shrove Tuesday most people eat Pancakes, hence the day is also known as Pancake Tuesday. I love any excuse to eat Pancakes but let me admit, I totally forgot it was Shrove Tuesday and only remembered on Wednesday, so you know what I ate on Wednesday right? Pancakes baby! Here’s the recipe
Coconut Pancake Ingredients
1/3 cup Coconut Flour
1/2 cup of Unsweetened Almond Milk
3 tablespoons melted Coconut Oil
1 1/2 teaspoon Baking Powder
1/4 teaspoon Sea Salt
2 tablespoon Honey
1/4 teaspoon Cinnamon (optional)
1/4 teaspoon Black Pepper (optional)
Olive Oil Cooking Spray for frying pancakes
In a small bowl combine and mix the dry ingredients (Flour, Baking Powder, Sea Salt, Cinnamon and Black Pepper) and in a medium sized bowl combine and mix the wet ingredients (Eggs, Almond Milk, Coconut Oil and Honey).
Next pour the dry ingredients into the wet ingredients and mix until all the lumps are gone. Stop mixing as soon as the pancake mixture is smooth.
Put a frying pan on low to medium heat. Spray only a small amount of Olive Oil in the middle of the frying pan. Scoop the pancake mixture using a cooking spoon into the frying pan. Fry on 2-3 minutes on each side (another clue that the pancake is ready to flip is when all the edges look firm/cooked).
Bacon, Tomato & Spinach Topping Ingredients
4 Smoked Applewood Bacon Rashers
8 Grape Tomatoes halved
1 cup Frozen Spinach
Spray a frying pan with Olive Oil and fry the Bacon until cooked, usually takes 5-7 minutes on (medium to high heat). Take the bacon out of the frying pan and leave the Oil and Bacon fat in the pan. Next place Spinach in the same frying pan and saute in the oil for 5 minutes. Remove the Spinach and put the halved cherry tomatoes in the same pan. Fry on both sides for about 2-3 minutes.
Top the Coconut Pancakes with the Bacon, Tomato & Spinach Topping and enjoy. You can even throw in some Parmesan cheese to the mix! If you have more of a sweet tooth you can enjoy the Coconut Pancake with melted chocolate and vanilla ice cream or even a blueberry compote. Happy Belated Pancake Tuesday and Shrove Tuesday.
